Sour Milk Waffles
1 1/3 c flour
½ t salt
½ t baking soda
¼ c melted shortening
1 c sour milk
1 t sugar
Sift flour, measure, and sift with salt and baking soda. Beat egg yolks until light and foamy. Add sugar and shortening. Mix well. Add milk alternately with dry ingredients to egg mixture. Fold in stiffly beaten egg whites. Bake in hot waffle iron. 6 servings.
I added vanilla, cuz I love vanilla, and I couldn't find my white vinegar to sour the milk, so I used raspberry instead and those two gave a lovely depth to the flavor of these waffles. They were soft and yummy! I barely got a chance to snap a picture as they disappeared off my boyfriend's plate.
